Tripe is the edible lining of the stomach of ruminant animals known for its digestive enzymes properties, perfect calcium to phosphorus ratio and its selenium, zinc and vitamin B12 content. Tripe is a great addition to the meat portion of a recipe or can be used to stuff a trachea for example as a treat.
